Raw Vegan Fettuccini Alfredo, perfect for a nice romantic weekend dinner!


You will need:

4 zucchini or yellow squash

Juice of 1 lemon (approximately 2 Tblsp.)

2 cups raw cashews

3 celery stalks (coarsely chopped)

2 Tblsp. fresh chopped onion

2 Tblsp. thyme leaves

2 cloves of garlic (we use more, but its up to you)

1/2 cup water, as needed


Blend lemon juice, celery, cashews, onion, thyme, and garlic until smooth and creamy, adding water when needed. Use your spiralizer to make the zucchini/squash into a spaghetti like shape, or if you dont have a spiralizer, cut your zucchini into long thing strips. Cover the "spaghetti" in the blended mixture, sprinkle a bit of pepper on it, to taste, and viola!!! Enjoy! This is going on my favorite foods list, it is delicious!

Sounds interesting. I bet you could use spaghetti squash for this dish. It is a nice alternative to regular pasta. Easy to prepare too, cut in half lengthwise, bake and use fork in a scraping fashion to produce thin spaghetti.
