It's Saturday and it's time to cook up a storm!!!

What is on the menu for today you might ask?

Vegan Burritos!!!!!

This recipe takes a while while while because of the seitan that I am putting in the burritos, but it really is worth the effort and time. You can omit the seitan and save a lot of time, but who wants to do that?

You will need: 1 box vital wheat gluten, 1/4 c. nutritional yeast, braggs soy sauce, tomato paste, a couple heads of garlic!, 1 cup brown rice, 4 avocados, 1 tomato, cumin, 1 white onion, 1 red onion, juice of 1 lime, salt, pepper, cilantro (if you like it), 2 cans of black beans, burrito wraps, and other optional items like tomato chunks, vegan sour cream, vegan cheese, lettuce, get the idea! Oh and hot sauce, if you dig it!

"Chicken" Strips:
1 1/2 c. vital wheat gluten ( I use one entire box)
1/4 c. nutritional yeast
1 c. very COLD water
1/2 c. soy sauce (we use braggs)
1 T. tomato paste
2 crushed garlic cloves ( again use the amount of garlic that makes you beam with joy!)

In a large bowl, mix gluten and nutritional yeast. Set Aside. In a seperate bowl mix all other ingredients. Add the wet to the dry and mix completely. Then knead the doughy mixture for about 3 minutes, until it gets playdoh like. Let it sit while you get the broth ready.
In a large pot, combine 10 cups COLD water and 1/2 cup soy sauce
Roll your dough into a loaf, and divide into 3 large chunks, add them to the COLD water. It is necessary the water be cold when you add the "chicken" or it will fall apart. Bring pot to a boil, then lower heat to simmer for about an hour. Stir ocassionally to be sure they dont stick to the bottom. Let sit and cool for about a half an hour
While this is simmering for an hour I get the rest of the items all set to eat!
After the "chicken" has cooled cut it into strips and pan fry it with very little oil on low low low heat until it is crispy on the outside and cooked in the will know when it is done, it will be heaven in your mouth!
*** we like to roll ours in some cracked pepper before frying, its up to you but its delicious***

cook up 1 cup of brown rice, set aside

Smash up 4 avocados, cut up 1 tomato, 3 cloves of garlic ( we always use more, so use what you like..we are garlic nuts!), 1 medium sized red onion, juice one lime and add it in there....then after this is all a finely chopped/mashed mess add a few dashes of cumin, and salt to taste. many people also add some fresh cilantro, I do not, I hate cilantro hahaha

Beans Beans Beans:

We used two cans of black beans, strain and rinse them well, then smash them in a frying pan....add some oil so it wont stick. We also added a chopped up onion, a couple cloves of garlic, and a chopped up hot pepper for a little kick...mix it all together and saute for a few minutes until its "refried"
When the beans are all set, add them to the cooked brown rice!

Then make up some burritos and enjoy!!!
Optional items that I will definately be adding
vegan toffuti sour cream, jessis mom got it for us, so we are gonna use it...tho you can make your own
Diced tomatoes
Vegan Toffuti cheese, which jessis mom also got us....

What we do is wrap the burritos up tight, then slowly and lightly toast them, by putting them in a frying pan for a couple of minutes!
